Tucked away in the close-knit community of Alstonville in northern New South Wales, Mark Pampling has built a reputation for thoughtful, creative floristry that speaks to every occasion — from life’s biggest celebrations to its most meaningful moments.

But his journey with flowers started long before the shop.

Mark likes to joke that it all began at just four years old, when he won a painting competition with a piece titled Grandma’s Roses. While that may have been the first hint, his real path into floristry took shape years later during university.

Originally studying Japanese, Economics and Psychology (which, in his words, he “hated”), Mark shifted into hospitality management — but it was floral art classes with a family friend that truly changed everything.

Growing up near Toowoomba, known as Australia’s Garden City and home to the iconic Carnival of Flowers, Mark was always surrounded by blooms. It didn’t take long for him to realise that working with flowers wasn’t just a hobby — it was his future.

Discovering a Creative Calling

It was during those early days that a newspaper article helped cement his decision. Profiles of leading florists like Kevin O’Niell in Melbourne and Phoebe Stephens in Brisbane opened his eyes to the creative possibilities within the industry.

“I realised there was an exciting world out there of working with flowers that could be my reality,” he says.

A Craft That Balances Creativity and Problem Solving

For Mark, floristry is far more than arranging stems — it’s about constantly engaging both hands and mind.

“The challenge and pleasure of working with horticultural materials is what I love most,” he explains. “You’re always finding new ways to present the beauty of flowers.”

And in a small community like Alstonville, that creativity is deeply personal.

Mark and his team are known for bringing meaningful, sometimes unexpected requests to life — especially when it comes to sympathy and funeral arrangements.

From specific colour palettes to incorporating personal items (including, on one occasion, an acoustic guitar), every design is tailored to reflect the life and story behind it.

Flowers That Connect Generations

In a town where everyone knows everyone, flowers often become part of a family’s story across generations.

“It’s quite special,” Mark says. “In a short period of time, we can be sending flowers to the same extended family — celebrating births, weddings, milestones, or offering comfort in difficult times.”

A Moment That Stayed Forever

One of the most memorable moments in Mark’s career came early on, when he was entrusted with creating arrangements for the funeral of someone affectionately known as “Poppy.”

The family had requested poppies, but they were out of season. By chance, Mark managed to source a few small bunches, placing them simply in a vase on the altar.

Days later, a family member returned to the shop.

At first, they admitted, they had been disappointed not to see poppies among the main tributes — until, during the service, they looked up and noticed the quiet arrangement on the altar.

In that moment, their disappointment turned into comfort.

“It felt like Poppy herself had been gently acknowledged,” they shared.

A Favourite Bloom (That Might Surprise You)

Mark’s personal favourite isn’t your typical rose or peony — it’s the Possum Banksia (Banksia baueri).

Large, textured and slightly unpredictable, these blooms have a unique glow, with muted outer tones and vibrant centres.

“They almost look like they’re glowing from the inside,” he says. “And their texture — you just want to touch them.”

According to Mark, one of the biggest misconceptions is that florists simply “play with flowers.”

In reality, floristry is about problem solving.

“Florists need to be resourceful, adaptable, creative and physically strong — all at the same time — to meet every customer’s needs.”

Change the water every day or two.

“It’s the easiest and most effective way to keep your flowers looking fresh for longer.”

“The flowers themselves. Nature is amazing — there’s always something new to appreciate.”

(Though he admits… red roses after Valentine’s Day might test that slightly.)
